Our 30 hectares of olive groves, located in the municipality of Montecchio, in the suggestive southern area of ​​Umbria, between Orvieto and Todi, precisely in the province of Terni, host over 7,500 olive trees which provide us with the fruits necessary to produce an extra virgin olive oil high quality olive.

Our Umbrian land, characterized by a favorable climate and fertile soil, offers the ideal environment for the cultivation of olive trees. Located between 300 and 600 meters above sea level, our olive groves enjoy optimal sun exposure and a variety of microclimates which give our oil a unique and distinctive flavour.

In our olive groves, the main varieties of olives grown are Moraiolo, which represents 55% of the plants, Frantoio with 30%, and Leccino with 15%. This combination of cultivars gives our oil an extraordinary complexity of aromas and a pleasant harmony of tastes. The fruits, carefully selected and harvested by hand, with mechanical and electric shakers during the months of October, November and December, are the basis of our high quality oil.

To ensure maximum freshness and preserve the organoleptic properties of the olives, we are committed to pressing them within a few hours of harvesting. In our own oil mill, we use a modern continuous cycle system for crushing the olives. This process takes place at a controlled temperature between 25 and 27 degrees Celsius, in order to obtain a cold-pressed oil. Cold extraction allows, in fact, to preserve the precious compounds present in the olives, guaranteeing a superior quality oil, rich in aromas and perfumes.

After pressing, the freshly extracted oil is naturally decanted to separate impurities and preserve its clarity, then filtered. Subsequently, the Ricci extra virgin olive oil is stored in stainless steel tanks under nitrogen to prevent oxidation and preserve its freshness. This careful management of the product allows us to offer an oil with an intense and persistent taste, with notes of freshly cut grass, fruity and delicately peppery.
